Tea Thyme and Organic Cordials



Yo yo! So its been crazy hot in Port Elizabeth lately and from what I hear it has been scorching in the other parts of South Africa as well... Good reason to mix?? I think so! In this spirit, I concocted an amazing Ice Tea that I would like to share with you... but before I get to that – please check out this site: http://www.kuhestan.co.za/products_order.html

Kuhestan is an Organic Raspberry and Avocado Farm in Magoebaskloof Area in Limpopo. This area is very well known in South Africa for their Raspberry and Blueberry production. The reason I posted their site details, is because I wanted you to take note of their amazing Persian  Cordial Range! Rose and Raspberry Cordial – this puts an amazing spin on a Kir Royale; mixed with a lovely MCC, garnished with some fresh raspberries!! My mother in-law swears by it! BROWNY POINTS! They also have  a Mint Cordial, a Lime Cordial as well as a Rhubarb Cordial(I can’t wait for mine to arrive!). The range of cordials is 100% organic and has 0% preservatives and colorants! So, I used one of their products in my latest tea! Last week I had a client request for a non-alcoholic drink that is refreshing, elegant and different. I prepared a Pomegranate and Sage Iced Tea for her. So here it goes: Woolies makes an amazing Pomegranate flavoured Rooisbos Tea by the Strandveld Tea Farmers(R20.95 for 20 tea bags), which I used as my base. I boiled it up and left it to chill for a while. Once chilled, I lengthened with organic cranberry juice and added some Kuhestan Persian Lime Cordial to taste. This added an amazing dimension, as this Cordial truly tastes like sweetened, fresh Swaziland limes. I finished it off by shaking it in a jam jar, but not before adding ice, a lemon wedge and 2 leaves of freshly picked sage. Needless to say, I left her thirst quenched and her request fulfilled... Because that is how I roll! Hahahaha!

Method:
Shake and Fine Strain, Build

Ingredients:
2 sticks of Seared Thyme(torch for a couple of seconds – do not be alarmed by the pop!)
50ml freshly squeezed Grapefruit Juice
20ml Giffard Raspberry Syrup
100ml Homemade Gingerbeer(Water, Brewer’s Yeast, Ginger, Sugar and Raisons)

Garnish:
Grapefruit Skin with Atomized Ginger
